Homemade Almond Butter

I love making my own nut butters at home. This way, I can control the taste, the texture and all the ingredients that go in it. Thus, the homemade version is way healthier, not to mention inexpensive. Plus, the process is very soothing to me. Nothing is more satisfying than watching your favorite nuts – mine is almonds – go from whole to creamy. This transformation – with all its glorious stages – takes place in front of your eyes and the food processor makes almost all of the work. All you need is almonds and 30 minutes of your time to make homemade almond butter. That’s it. If I convinced you, try this and you will never go back to store bought.

INGREDIENTS

200 grams raw unsalted almonds

1 tbsp vegetable oil

1/4 tsp salt

1/4 tsp cinnamon

INSTRUCTIONS

Step 1

Preheat the oven at 350o F or 180o C and spread the almonds on a baking sheet, on a single layer. Roast the almonds for 8 minutes or until fragrant and lightly golden brown. This will help the almonds release their oils more quickly.

Step 2

Then, add the almonds in a food processor and blend on high speed. First, the almonds will become almond meal. You may need to scrape the walls every once in a while to keep things moving. Stay patient – they might seem to stay like this forever, but this is not the case.

Step 3

Then, continuing blending, you will see an ‘’oily zone’’ and the almonds will finally release their oils and form a clumpy paste. This is the moment to add the vegetable oil – optional, but helpful.

Step 4

Finally – with the extra help of the vegetable oil – the paste will warm up and have a smoother consistency. Keep blending until it comes together to your preferred texture. At the end, add the salt and cinnamon or any other spice/taste of your choice.

Store your homemade almond butter in a jar and keep for up to 2 weeks in the pantry, or for up to a month in the refrigerator. Enjoy with some jam, on top of your morning oatmeal or simply, as it is, by the spoonful.

  • Add the almonds in a food processor and blend on high speed. Scrape the resulting almond meal from the walls when needed.
  • Continue blending until the almonds form a clumpy paste, then add the vegetable oil.
  • Keep blending until the paste warms up and has a smooth consistency. At the end, add the salt and cinnamon to taste and store in a jar.
