Classic Hummus

The all-time classic hummus is a crowd-pleasing appetizer and the hero of every gathering. Seriously, no matter how many finger food items you serve, you will always find people going back to munch on this humble-looking plate. And rightfully so, because the combination of taste and texture in this Middle Eastern dish is plain genius. Nothing is more satisfying than dipping crunchy vegetables or warm bread in this creamy and filling spread. Well, to be fair, knowing how easy it is to make is even more satisfying. Using only a handful of basic pantry-friendly ingredients, this recipe gives you only a rough idea. With room to experiment with different spices and toppings, you can easily give it your very own spin.

INGREDIENTS

250 grams chickpeas

1 tsp baking soda

1/3 cup tahini

1/4 cup lemon juice

1 garlic clove

1 tsp salt

1/2 tsp pepper

1/2 tsp cumin

1-2 tbsp olive oil

1-2 tbsp iced water (optional)

INSTRUCTIONS

Step 1

First of all, this step is totally optional. But this trick will guarantee that your hummus will be extra smooth and creamy. Begin by bringing some water to a boil and add the baking soda and the – rinsed and drained – can of chickpeas. Let it simmer for 10-15 minutes until the skins of the chickpeas break off.

Step 2

Then, strain the softened chickpeas and let them dry completely. Now, this is very important because any extra water can make your hummus really watery and runny. In the meantime, squeeze 1-2 lemons to extract their juice, grate – or mince – the garlic clove and gather the rest of the ingredients.

Step 3

Lastly, put the chickpeas together with all the other ingredients in a food processor and pulse until smooth. Blend, scraping off the sides if needed, until you have your desired consistency. At this point, you can also add the water if you like a creamy hummus. I love a thick texture, so my absolute sweet spot is blending it without water for about 3 minutes.

And voilà, you made yourself a batch of delicious classic hummus. You can spread it onto a plate and top it with some more tahini, olive oil and spices. Or you can load it with more chickpeas, various vegetables and/or feta cheese – the possibilities are, truly, endless.

Ingredients
  

  • 250 grams canned chickpeas
  • 1 tsp baking soda
  • 1/3 cup tahini
  • 1/4 cup lemon juice
  • 1 clove garlic
  • 1-2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cumin
  • 1-2 tbsp water iced

Instructions
 

  • Bring some water to a boil and add the baking soda and the –rinsed and drained – chickpeas. Let simmer for 15-20 minutes until their skins break off.
  • Strain the softened chickpeas and let them dry completely. Squeeze 1-2 lemons, grate – or mince – the garlic and gather the rest of the ingredients.
  • Pulse the chickpeas together with all the other ingredients in a food processor until smooth. Gradually adding some iced water (optional) will result in a creamier consistency.
