Caramelized Banana Oatmeal

Do you have a massive sweet tooth like I do? Then you recognize the struggle of wanting something on the sweeter side for breakfast. Well, you are in for a treat, because this warm caramelized banana oatmeal will satisfy your cravings. Still, it will provide you with all the nutrients you need. Seriously, try these oats and you will be blown away. You’ll barely realize just how good these are for you because of how good they taste. They are healthy and delicious – sweet, creamy, nutty and loaded with vanilla flavor.

INGREDIENTS

1 cup water

1/2 cup almond milk

1/2 cup oats

1 medium banana

1/2 tsp coconut oil

1/2 tbsp almond butter

1/2 tsp chia seeds

1 tsp vanilla extract

Cinnamon

Bee pollen

Salt

INSTRUCTIONS

Step 1

Bring water to a boil over medium high heat, then add a pinch of salt and the oats. Stir and let them cook for 5’-7’.

Step 2

Add the almond milk, a dash of cinnamon and vanilla extract. Stir and let it simmer for 3′-5’ over medium low, then remove from the heat.

Step 3

Heat the coconut oil in a pan and add the banana – you can cut it either in thick pieces or lengthwise in two halves – sprinkling with cinnamon. Let one side caramelize for 2’-3’, then flip and repeat for the other side.

Step 4

Meanwhile the oats will soak up the liquid and they will have a perfect texture. Serve immediately, topping with the banana, the almond butter, the chia seeds and the bee pollen.

You can add anything you want, really, but this caramelized banana oatmeal bowl goes very well combined with a nut butter and some nuts/seeds for a crunchy note. Grab a spoon and enjoy it while it’s warm!

  • Serve immediately and top with the banana, almond butter, chia seeds and bee pollen
